Yoghurt salad with cucumber■
 
◆材料
500 grams plain yogurt
tsp salt
pinch of ground black pepper
5 drops of lemon
1/4 tsp ground garlic
one cucumber dried mint


◆作り方
Mix the yogurt with a spoon until soft, then add salt and pepper. Add few drops of lemon and garlic.

Sprinkle the dried mint and mix all together.

Cut the cucumber to small pieces and add to the yoghurt Serve with most of the rich main meals specially in summer.

It has a low calorie and is high in nutritious value

■Kosheri (Rice and brown lentils)■
 
 
This is a very popular Egyptian dish. Its a vegetarian dish that is very high in plant protein and carbohydrates. That's why it is a main dish that is served on its own. A spicy tomato sauce and fried onions are added for this dish.

◆材料
2 cups white rice
1 1/2 cup brown lentils
2 tablespoons oil or margarine
1 tablespoon garlic, crushed
Two 16-ounce cans of tomato sauce
1 cup water
1/4 cup vinegar
2 medium onion
salt and pepper to taste chilli powder (optional)
100 grams small macaroni


 
◆作り方
Cook the rice and brown lentils separately using boiling water and a pinch of salt to taste.

To cook the lentils put them in a pot, covering them with water.

Bring to a boil, then simmer on low heat until almost all the water is absorbed and lentils are well cooked.

Add extra water if longer time is needed.

Drain the lentils very well from any water and add to the cooked rice to mix together.

Put on stove for 10 minutes while mixing with little oil (1 tsp) for further cooking.

: Heat 1 tablespoon of oil in a separate saucepan.

Saut the garlic until golden.

Add both cans of tomato sauce and simmer 10-15 minutes.

Add water and vinegar and bring to a boil.

Remove from heat immediately and add salt to taste.

Add chilli to the sauce.

Slice onion in small pieces and fry in remaining one tablespoon oil until brown and crispy.

Serve the mixed rice and lentils in a plate. Put the macaroni on top, then sprinkle the fried onions to garnish.

The tomato sauce is then added on the top of the dish when served.
