ポーランド料理には、たくさんの落とし穴があります。 それは作りやすく、非常に美味しく作るための秘伝レシピの数々。 様々なお料理が世界で流通しはじめ、知識が共有されるようになりましたが、 ポーランド独特の知恵はまだ未知の世界に包まれています。
ポーランドの食事は1日4回から5回食べる習慣があります。
7〜8時頃 1回目の朝食スニダニエ
10時 2回目の朝食ドゥルギシニャダニエ
12時〜14時 昼食オビヤド
16時〜17時 軽食ポドウィクゾレック
19時〜20時 夕食コラツィア
今回はポーランドの独特な習慣ドゥルギシニャダニエと呼ばれる2回目の朝食で食べるオープンサンドイッチをつくります。

Kanapki

スライスしたパンの上には、とにかく沢山の味から作られるバラエティ豊かで美味しい食材。
今回パテを含めて2-3種類のオープンサンドイッチを作ります
Pasztet

古い伝承が息づいたお料理からは、たくさんの人々の思い、のんびりと時間が流れるポーランドの台所が心に浮かぶよう。
カナペツキ(サンドイッチ)の人気トッピングの一つはパスケットと呼ばれているパテです。

ポーランドは小さくて丸いお食事パンの外に、スライスしてサンドイッチなどで使うフレプという種類のパンがあります。ポーランド料理の魅力を体験してください。
Zupa ogorkowa
● ズパ・オグルコヴァ
ポーランド代表するスープです。直訳をすると胡瓜のスープですが、胡瓜がそのまま入っているわけではなく、塩水に漬けてピクルス状にしたものを具に使います。
お肉や野菜から取ったブイヨンでじっくりと旨みを出したところにほんのり酸味が加わり、世界中にどこにもないポーランドならではのスープが出来上がります。

ポーランド代表するアップルパンケーキです。さっぱりとして甘さが控えめなので朝食に良く登場します。やわらかくて口の中で溶けてしまいそうな味わいです。

ポーランドの人達は家でパステットを焼きます。 クリスマスやイースターのお祝い、誕生日や名前の日(イミェニヌィ)など、多くの特別な集まりの時に必ず登場します。
ここまで読んでいただいた方は名前の日に引っかかったかもしれません。ポーランドでは365日それぞれ聖人の名前が付いていて、自分の名前と同じ聖人の日を祝う習慣があります。
伝統的な民俗料理を通して、象徴的なサンドイッチを作ることには非常に意味があります。
ポーランドにおけるパテ作りの歴史は非常に長く、16世紀にフランスからポーランドに伝わりました。当時、最も裕福な職業は裁判所で、パテの準備の達人たちが多く働いていました。
最高の味を生み出すには、テクニックと正確さが必要です。

フランスではパテ(pâté)と呼ばれているものがポーランドでさパスティ(pasté)と呼び方が変わったことに意味がないわけではありません。創世記の頃は主に肉の塊を焼いて作っていました。やがて冷菜も生まれ、パテを焼く型も登場しました。フランスではパテ•アン•クルートのような肉をパイ生地に包んだものがありますが、ポーランドでは肉だけでなく、キャベツやキノコ、ホウレンソウを詰めることもあります。
またパスティは温めてソースをかけて夕食としてサーブするよりも、冷菜のほうが多く登場します。
今回はポーランドのパン、酸味の強いキュウリで作ったポーランドの代表的なスープの作り方や、簡単なデザートの作り方についても学びます。
May could be a great season for picnic so I think it is a perfect time to present to my students polskie kanapeczki - that means polish sandwiches. Polish people like to eat sandwiches a lot. They very often eat sandwiches for breakfast and supper - in the evening. They also take sandwiches to work to eat as a second breakfast (drugie sniadanie) or lunch. What is so particuar about polish sandwiches? first of all those eaten at home are open so they consist of only one piece of bread with butter and some topings - usually meat or cheese and vegeatables. Lets make some sandwiches together!
Pasztet
One of the popular topings for kanapki (sandwiches) is pasztet (pate). Poles usually bake pasztet at home. It is an esential element of many special gatherings like celebration of Christmas and Easter as well as birthday and name days (imieniny).
The history of pate - making in Poland is very long. The recipe first came to Poland from France in 16h century when masters of pate preparations where emplyed at wealthiest courts.
The best taste requires a lot of patience and precision. The more absorbing the process of shaping the perfect recipe and harmoniously combining the ingredients, the richer the taste sensations we can expect. This is also the secret of the pâtés, which differ in terms of the type of meat, additives, spices, preparation methods and serving methods.
Starting from a refined delicacy for the elite, through a traditional dish of folk cuisine, and ending with the iconic sandwich addition - the history of the pate, although rich, contains one constant element that has not changed over the centuries. It is an extremely rich and expressive taste, which, both in the classic version and in the company of original additives, delights lovers of meat specialties all over the world.
One of the popular varieties of pate, especially often prepared on the occasion of Christmas, is the pate baked in the form of a cake. The relationship between the original French name of this delicacy - now pâté, formerly pasté - and the dough noun - pâte, is not without significance. The first pates were made mainly by baking a meat mass. It was only with time that a variety of pâtés served cold appeared, and the name of "meat" baked goods was also used to describe products served only cold, which are not prepared in the oven.
There is also a specialty in French cuisine called pain de viande, or simply "bread made of meat". You can also bake the pate in a water bath or in a roasting pan. In the West, it is more common to bake a meat mass in a dough (pâté en croûte). It also occurs in a similar form in Polish cuisine, in the form of patties stuffed not only with meat, but also cabbage, mushrooms or spinach.
Although the pate can be served hot, as a dinner dish with the addition of sauce, which was very often practiced at the beginning of the 20th century, it is much more popular in the cold version, as an addition to bread or as a side dish.
The chilled version of the pate is now part of the canon of sandwich toppings. The most popular flavors, apart from purely meat ones, are those with the addition of tomato, mushrooms or pepper.
The great addition to the Polish sandwichs is also a Polish sour bread. With my simple recipe you can turn your picnic into a real deal!
We will also learn how to prepare one of the most popular Polish soups made out of sour cucumbers as well as some simple dessert.
